In a bowl, mix honey, soy sauce, garlic, olive oil, and vinegar. Add chicken thighs and coat evenly. Let marinate for at least 10 minutes.
Preheat the grill to medium-high heat (around 375°F). Oil the grates to prevent sticking.
Place chicken thighs on the grill and cook for 5-7 minutes per side, basting with remaining marinade.
Ensure the internal temperature of the chicken reaches 165°F. Chicken thighs get better at even higher temps with their higher fat content than other chicken cuts. (180-195 degrees)
Remove from the grill once done.
Let the chicken rest for a few minutes before serving to retain juices.
