In a bowl, toss sliced beef with soy sauce, sesame oil, and cornstarch.
Let marinate for at least 10 minutes while prepping vegetables and sauce.
In a small bowl, whisk together soy sauce, oyster sauce, hoisin, brown sugar, ginger, and garlic.
Set aside. Keep cornstarch slurry separate until ready to thicken.
Heat 1 tbsp oil in a large skillet or wok over high heat.
Serve hot over a bed of white rice.
Garnish with chopped green onion if desired.
