8 bone-in, skin-on, chicken thighs
2 tbsp olive oil
1 ½ tsp sea salt
1 tsp black pepper
1 tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
Preheat Oven: Preheat your oven to 450°F (232°C).
Season Chicken: Pat the chicken thighs dry with paper towels to remove any moisture—this helps the skin crisp up. Rub each thigh with olive oil, then season evenly with salt, black pepper, smoked paprika, garlic powder, and onion powder.
Arrange in Pan: Place the seasoned chicken thighs, skin-side up, in a casserole dish or roasting pan. Make sure the thighs are not touching so the skin can crisp evenly.
Roast: Roast in the preheated oven for 40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
Broil: Turn on the broiler and broil the chicken for 1-3 minutes, watching closely to avoid burning, until the skin reaches the desired crispiness.
