Cut from the plate or chuck, short ribs are prized for their deep marbling and connective tissue, which breaks down beautifully during low-and-slow cooking. These generously sized ribs are ideal for classic braises, Korean-style galbi (with a soy-free marinade like coconut aminos), or smoky BBQ ribs cooked to perfection.
Braise or Roast: Cook low and slow at 275°F for 3–4 hours until fork tender.
Smoke: Smoke at 250°F until internal temp hits 200–205°F for ultimate tenderness.
Serve With: Mashed potatoes, roasted vegetables, or spoon the sauce right over the top.
