Elk shoulder is a hardworking, muscular cut — ideal for low-and-slow cooking methods that break down connective tissue and bring out its bold, game-forward flavor. Pre-diced and ready to go, it’s excellent in rustic dishes that call for depth, aroma, and a satisfying, fork-tender bite.
Option 1 – Braise (Recommended):
Best for unlocking flavor and tenderness in this lean wild cut.
➤ Brown diced elk in batches to build flavor. Deglaze with stock or wine, add aromatics (onion, garlic, thyme, bay), and simmer gently on the stovetop or in the oven at 300°F for 2.5–3 hours until fork-tender.
Option 2 – Slow Cooker:
➤ Add browned elk with broth, root vegetables, herbs, and a splash of balsamic or tomato paste. Cook on low for 6–8 hours until rich and tender.
Serving Ideas:
Serve over mashed root vegetables, wild rice, or buttered egg noodles. Excellent with red wine reductions, mushrooms, or juniper-infused sauces.
