About:
Pluma — meaning “feather" in Spanish — gets its name from its elegant, wing-like shape. It’s one of the most tender and flavorful cuts on the Iberico pig, thanks to natural marbling and the acorn-rich diet of the animal. Often served medium-rare like a fine steak, it shines with minimal seasoning and careful cooking.
Grill or Pan-Sear: Cook over medium-high heat to 135–145°F internal temp.
Rest & Slice: Let rest for 5–10 minutes, then slice against the grain.
Serve Simply: A sprinkle of flaky salt and a drizzle of olive oil is all you need — or pair with roasted vegetables and crusty bread.
