Skirt steak is a long, thin, and intensely flavorful cut taken from the diaphragm muscle. The outside skirt is the prized version — thicker, more tender, and more marbled than inside skirt. This Wagyu variety is buttery, juicy, and full of umami, thanks to the rich intramuscular fat of Wagyu cattle raised in Australia. Quick to cook, impressive to serve.
Grill or Sear: Cook hot and fast — 2–3 minutes per side for medium-rare.
Rest & Slice: Let rest 5 minutes, then slice against the grain for tenderness.
