1.5-2lb Skirt Steak
Salt & Pepper
1tbsp Olive Oil
1 cup flat leaf parsley, chopped
3 cloves garlic, minced
2 tbsp red wine vinegar
1 tsp dried oregano
½ tsp red pepper flakes (optional)
salt and pepper to taste
Pat the steak dry, season generously with salt and pepper.
Let sit at room temperature for 30 minutes.
Mix all sauce ingredients in a bowl.
Let sit at least 20 minutes, or refrigerate overnight for deeper flavor.
Cook steak over high heat (grill or cast iron) for about 3–4 minutes per side (medium-rare).
Rest 5–10 minutes.
Slice against the grain and spoon chimichurri generously over the top.
